Evil Stepmonster Sweet Potatoes
- 2 ¾ lb. Sweet Potatoes
- ¾ cup Honey
- ½ cup Milk
- 1 tsp Vanilla
- 1/3 cup Butter
- 2 Eggs
- 1 cup Shredded Coconut
- 1/3 cup Flour
- 1/3 cup Butter, melted
- 1 cup Chopped Pecans
- ½ cup Brown Sugar
- Cut sweet potatoes into 1 inch cubes and steam until tender. Mix with honey, milk, vanilla, butter, and eggs and place in a 10’ x 14’ baking dish.
- Combine the coconut, flour, pecans, and brown sugar. Add the 1/3 cup melted butter.
- Sprinkle on top of the sweet potatoes.
- Bake at 375 degrees F for 20 minutes, until brown.
