with rhubarb-balsamic reduction
• Corn and black bean wonton cups with cilantro crema

Appetizer
Roasted beet and feta over mesclun greens with apple chips
and chile-dill vinaigrette with blue corn bread
Entrée
• French Rouge Chicken confit rillette, roasted chile filet, winter
squash-studded Floriani corn polenta, sage pesto
• Butternut squash gnocchi, wilted spinach with wild mushrooms,
sweet pepper and chile rajas, Asiago cheese and sage-browned
butter sauce (GF, V, will be modified for Vegan Guests)
Dessert
Classic Apple Streusel with fresh and dried apples and a crumble
topping served with Taos Cow cinnamon ice cream
