Adam Elbeck is serving his first year with the Santa Fe Farmers’ Market Institute as the Healthy Food Financing Initiative (HFFI) AmeriCorps VISTA Coordinator. HFFI aims to improve access to healthy foods in underserved areas, create and preserve quality jobs, support food supply chain resiliency, and revitalize low-income communities in New Mexico by offering business development, community development, and increased financial opportunities. As part of the Institute, Adam is building a community navigation service for New Mexico, providing a roadmap of resources and services for potential clients working with HFFI. In his free time, you can find Adam exploring the woods, foraging for wild huckleberries, or attempting to walk from Mexico to Canada.
